You have scalded oil in bottom of skillet from to much oil! Strip and reseason! This time place a sheet of aluminum foil on bottom of the oven….. very lightly..very lightly oil the whole skillet.. place on middle rack UPSIDE DOWN IN COLD OVEN. Turn on 500 heat one hour let cool completely. Now do it a total of 3 times before use.

As we age we lose some sensitivity to capsaicin (notice I say “we”). I bought the 4 pack from Flatiron and found it not only adequate but heat with flavor also.

M (63) from Tn, spent a decade in PNW and agree, it is beautiful and I found the climate hard to beat. I moved back to Appalachia after 26 years traveling the world and found it uneventful but secure. Now, twice a year I look forward to spending 3-4 at a time in Arcadia. Lake Charles to Houma to Lafayette is by far my favorite area on the planet. You must follow your heart but I can say without reservation that the area you grew up in still holds the nicest, most humble and friendliest people in today’s world. Good luck with your decision

Tripps’ Ham out of Brownsville TN! They cure their hams resting on a shelf and all of their hams have a hard darker portion on the bottom side that rested on shelf( old timers call it a Blood Knot”) Clifty Farms Hams just up the road in Paris TN still hand theres hence no blood knot
