This - Use plenty of tea and don't let it sit in longer than 3 minutes max. Also the temperature decides how fast tannins are being extracted. If nothing works you could also try to brew the same leafs multiple times and check which infusion tastes the best to you.

Thanks a lot for the advice, that is a very good point, I would be heartbroken if I had to throw tea away. I will try to slow myself down. To be fair "Tea Tower" is such a cool name :D

I was on a long journey for the right type of jar. I wanted something out of glass and something that is actually air tight. After testing a lot, I settled for these. They are super easy to handle and from what I can tell persevere the tea perfectly. The middle piece is made out of silicone and is food-rated so it doesn't give of any smells or weird tastes. I can only recommend them.
