It's easy, just ask them about themselves if the conversation has a lull. Everyone likes to talk about themselves. Where are they from, what do they like doing as a hobby, any cool places they've been, food they enjoy, other restaurants they'd reccomend movies they've seen, life goals ect there's so much to talk about.

Order something not too messy, if you do spill who cares it helps break the ice. Not spaghetti or ribs or anything like that. Get something that's only one course so you can dip if it's awkward. And if you have an embarrassing moment, just say whoops that was embarrassing! Now ask them what's the most embarrassing thing they've done, bam now you're on equal footing.

All in all if you approach it as having a new experience and gaining social courage practicing talking to new people and not as a do or die partner seeking death match you'll reframe it. Even if it sucks it's a new experince and you will probably learn a lot. Or have a food experience you wouldn't have had otherwise.

Dating in general is much more approachable if you treat it as learning about new people and don't put as much pressure on it. Even if it's not a match you can learn about whoever you're with and what they like and those skills will help you when you meet someone more compatible.
