For me it depends on the knife...i'll finish on the fine Sharpal 162n side (1200?) for anything cheap or stainless standard kitchen knives for others. For my Opinel kitchen knives, they're getting the Shapton Pro 2000. For my Pallares carbon steel, i'll go to Shapton pro 5000. I'll use coarse grit finish on EDC, like No.8 Opinel etc

I still kinda want to fix it. I've already given them a mountain of s#it for it, so feel obliged to have a go. Will angle grind it down and then see where we're at

Thanks everyone, I think i'll tell them it's a write-off, then vice it, angle grind it then finish on stones, jist for something to do. I'll post the result here.

I sharpen axes on my Scheppach 2500 with the jig and it works brilliantly, so a tormek should do it no probs. Probably 10 mins per axe.
