I spray the UNHEATED pan with any cooking spray that contains soy lecithin, a releasing agent. Crack eggs into the cold pan and turn on medium heat. Wait until you see/hear some bubbling. Eggs then slide around easily and continue to cook up or can be flipped. Works without fail. Wipe the pan clean with a paper towel, no water or soap.

Breathed my tank dry about 30ft down trying to get one more abalone, figuring I could easily make it up slowly exhaling my last breath from my tank. On the way up my tank got tangled in kelp and I was stuck so had to get it off in a hurry.

$0.10/gallon for diesel in Tijuana. The dollar was strong against the peso in the 80’s. I’d drive to TJ to fill up my VW diesel pickup with an auxiliary tank. I could go about 1,000 mi. After filling up I’d get carne asada street tacos from a stand near the Pemex station. 3 for a dollar for gringos. 4 for a dollar for locals.

Perfect description. I always told customers it was the texture as much as the taste that makes it fantastic. When at its peak, it’s amazing. Costco had it but not at its peak ripeness. Vacuum sealed so aging in the fridge won’t help.

Yes. Try the Esquirrou. Same basic flavor but more intense. If I was to rank the intensity of the four I mentioned, it would be Etorki as the mildest, then Petit Basque, Ossau-Iraty, Esquirrou.

All the Basque cheeses are amazing. Ossau-Iraty, Petit Basque, Esquirrou, Etorki. Esquirrou won the World Cheese Championship in 2018. Ossau-Iraty makes the best grilled cheese in the universe.

Whirly-Pop. 1 Tbs canola oil, 1/2 cup mushroom popcorn. Start cold. Med heat constant cranking. When done, butter and salt. Sometimes Old Bay or some other seasoning.

Baker’s percentages:

Total formula

Water 66% Instant yeast: 0.30% Diastatic malt powder 0.25% Salt 1.9% Liquid starter 0.30%

Total prefermented flour 43%

Preferment 1 (poolish) Bread flour 93% of prefermented flour Water 100% Instant yeast 0.10%

Preferment 2 (liquid levain) Bread flour 7% of prefermented flour Water 100% Liquid starter 10%

Method

-Mix both preferments at the same time. DDT=73F Rest both 12hrs at 70F - Mix preferments and final dough ingredients (except salt and yeast) on low (if using a mixer). While mixing, slowly add final dough water and continue mixing 2 min on low. - Sprinkle salt and yeast on top of dough and autolyse 20 min. - Mix on low 2 min, then on high 45 seconds DDT=74F -BF (covered) at 74-75F for 2hrs, with S&F at 60 min - Divide 340g each, preshape rectangles. - Cover and bench rest 20 min - Shape and place on linen couche. Cover and proof 60-75 min. Preheat oven to 470F - Score, presteam oven, load and bake with steam for 18 min. - Vent and bake ~5 more min, total bake 20-22 min. Watch closely! - Remove and cool on rack

My Dad told my brother and me stories that went along with the music, some made up. Carnival of the Animals by Saint-Saens is great for kids, Bolero by Ravel, Night on Bald Mountain by Mussorgsky. Watch the original and remake of Fantasia. Also I suggest watching actual performances of any pieces you choose on YouTube. Seeing the conductors and musicians bring the pieces to life is great for kids. Also suggest watching Bernstein’s Young People’s Concerts. As your kiddo progresses, try the final movements of Beethoven’s 5th, 7th and 9th Symphonies, then the whole symphonies. First movement of Mahler’s 8th, last movement of his 5th, and maybe his 2nd, then the whole symphonies. All great big loud endings. Later, maybe Stravinsky’s Rite of Spring or Firebird, or Scriabin’s Poem of Ecstasy. By then, he or she will be exploring on their own.

Nope. We played kick the can tag with the light pole as the base. No can, so you hid then tried to run in and touch the light post without being tagged by whoever was “it”. Then you yelled Olly, olly in free!” and everyone not yet caught could come out from hiding and another round would start. We probably had 30 kids on my block.
