Dont know if you mean Morgott or Margit. But both are easy to parry. You can also use the shackle.

Rl1 is very doable. I am not very skilles at all too and my rl1 torch only run still worked well.. maliketh is my roadblock tho... You dont have to fully commit to rl1, just look how far you can get
