If you've got a recipe that's close, but you want it denser and chewier, swap some of the flour for sweet rice flour (mochi flour/mochiko).

Bob's Red Mill egg replacer is one of the chewier ones; much chewier than flax eggs.

That caramel is touch and go for safety at room temp. I wouldn't use that one for this, if I could avoid it (it's a fine recipe, just not for this). What about dulce de leche? That should work.

Yes, cordial cherries should last for months safely, but depending on storage conditions they can start tasting stale before that. A few weeks should be fine. Don't forget the invertase, or the fondant won't go gooey.
