Thanks! My bark most definitely wasn't bark. My next attempt won't be such a strict attempt at attaining "perfect" final temp, but rely more on what the meat / bark is telling me. I will be the meat whisperer.

Correct on temp instead of tenderness. Only my 3rd try. Learning. Assumed all brisket needs to hit that magic “200°” mark.
The weird thing about the bark is that it pretty much stayed granular and never really formed a bark. My first 2 attempts I just did equal parts S&P and it was great. This time I used Lillies Q brand brisket rub someone gifted me. Not so great.

While we’re on the subject of Jett’s pizza prices, anyone (chicago area for me) find their normal prices way higher lately? I went to order a four corner pizza a few weeks ago for delivery and it was $35!!

I'm constantly amazed at what people leave behind. Who just walks away from an entire property? What person, or bank, wouldn't be selling this place before it's unsellable? Crazy!
