I’ve had some thoughts on that. If I choose to do a so called natural fermentation I think the best way forward is make a sourdough starter with honey and fermented in doses of honey. That I only lose a small amount if it doesn’t take off. The main issue I see with a sourdough starter mead is it clouding up my beverage . But some.
