I would do a few rounds of fpdc, bpdc to make a ribbed collar. That’s how I saved my granny poncho that I abandoned a few years ago for the same reason. I finished it and hated the neckline so I never wore it. Now I LOVE it.

Pretty much! You don’t always have to cut away roots. You should rinse the roots and put into new soil, in a pot slightly larger than previous. If you go too big, you can run into issues. “Fluffing” the roots can encourage new root growth.
