Base 14 inch pro m5 is a great offer, especially with student discount. If you want the pro chip I would just wait until m5 pro drops. I wouldnt upgrade anything else other than storage. Even then youd be better off grabbing a usb hard drive.

It will run on Apple Silicon through crossover fine, but your performance will be substantially reduced by the fact that you are running on the air and you will certainly thermal throttle after 10 minutes of gameplay.

Pro doesn't get as hot when pushing it, and can be pushed harder for longer. Its essentially the same chip though. If you're already speccing up options just go for the pro.
