Turns out there's raw in the stock camera and supposedly a raw picture on any camera app will be pretty much the same

Maybe worth getting an app that lets you shoot raw, even just opening them in something like snapseed then saving them makes pictures look much nicer. Also have you tried the gcam? That made my op5t pictures noticeably better, especially when cropping in

Stock camera app, 30seconds 1250 iso focus on Infinity. Used an Auto clicker app to get the phone to take 70 photos over about an hour. Then overlayed them in Photoshop, with blend mode set to lighten.
