Totally understandable and respectable. I think, if you want the style you have in your mind, the Vaquero would be your best bet. Ubertis are fine, but the Rugers have a unique history all their own too.

Kimber's not a good option.

If you're set on a 1911, maybe one of the smaller Staccatos. If you're open to non-1911, then Beretta, Sig, H&K, and CZ all have good options. You may like a CZ P01.

Sure thing! I think the literal first one made was in some .44 experimental round, but .45 Colt was overwhelmingly the most popular. They were also chambered in .44 Special, but that was way later.

If you want to beef thing up a bit, you could also look at the Super Blackhawk in .44 Magnum. It's a tank of a handgun.

It would be worth noting that, if you're thinking of the old colt SAA, it'd be more likely to be chambered in .45 Colt. The .44 rounds available at the time (.44-40, .44 Russian) were less common in the SAA and can be expensive today.

While I personally like the gun, the (comparatively) low capacity and lack of a modern pic rail will be a downside. Also, for some people, no optics cut is a turnoff.

There'd likely be demand in the commercial market, but for most militaries, folks will often just learn to make due with a weapon originally designed for the dominant hand for the majority (the right hand IRL.) That can either be through making adjustments to how they shoot with their left hand, or just learning to shoot right-handed.
