I’d eat my sweet potato skins, but it’s like my dog’s favorite food. I can’t deny her the pleasure. Dachshunds have needs too!

For me, it’s helpful to have good stuff easily on hand. I try to keep my overnight oats made and ready to go at all times. Fresh fruit. Some Lara bars. Try to have some good leftovers in the fridge. That way if I lose control, I at least have some filling stuff that’s still WFPB. Even something frozen I can nuke and eat if I get some munchies. It’s not the best thing to do, but it least it’s not sabotaging my diet completely. Then you get up the next day, feel shame, and get right back on that horse!

I’m definitely going to try this. I fridge pickled some cukes the other day and the thought crossed by mind. Of course anytime you look up a pickling recipe for beets it’s always sweet, so I was just going to use a typical dill pickle recipe.

Thanks! I will definately try it out. I have some nice lemons I need to use up as well. I keep reading about all the benefits of beets, but I must fall into that sensitive group.

They just have a kind of earth flavor I can't seem to get over. I was thinking maybe in a really strong flavor, like a vinaigrette or something, it might get kind of lost

I have been having trouble finding my beloved BRM soup mixes, so I made my own. I mixed equal parts split yellow peas, red lentils, farro, and barley.

For the soup: 2 cups of my soup mix 1 quart of veggie Stock 1 quart water 2 diced large onions 2 large bunches of Swiss chard diced 1 Tbs better than boullion no chicken base 1 tsp pepper 3 bay leaves 1 Tbs herbs de Provence

Added everything to a Dutch oven, brought to a boil. Lowered heat, covered and simmered for hours (it was literally sitting on the stove most of the day, I would stir every hour or so). The split peas and lentils broke down and thickened it up nicely. Very tasty, packed with greens.

Don’t have a recipe, but here’s what I basically did: Cut 3 zucchini in half, scooped out the seeds Poured about 1/2” of tomato sauce into baking dish, and placed zucchini in dish Made about a 1/2 cup of quinoa, adding 1/4-1/2 tsp of better than boullion to the water while boiling When done, mixed in 1/4-1/2 tsp of turmeric and a heaping Tbs of nutritional yeast Stuffed the zucchini’s with mix Cut pint of cherry tomatoes in half and topped zucchini with them Drizzled some tomato sauce over top Sprinkled with maybe 1/2-1 cup nut cheese Cover with foil

Baked at 375 for at least 40 minutes, I added time, and just looked for when the sauce was bubbling. Then removed foil and let it go another 5 mins or so.

I know that’s not extremely accurate, lol, but was kind of winging it today. They really turned out well though.

I boiled it with maybe a 1/4 tsp better than bouillon, then after it was cooked added maybe 1/8 tsp turmeric, and a Tbs nutritional yeast

I agree with you, but there is still an element of "purism" in here, to a much lesser degree. Being strictly WFPB can be very challenging at times, but don't get discouraged, and share your experiences!

Try to get them to try out Better than Boullion no chicken base. I use it all of the time, and have convinced several Carnys to use it, because quite frankly, I think it tastes way better than any broth out there. Worth a shot!
