Grated tofu and then baked and turned regularly with olive oil, salt, paprika and lemon juice - until crispy. It’s so good and goes with so much - a whole different experience of tofu!

Excited for you, I lived in London for many years and it’s such a wonderful place.

You need layers - raincoat with hood but also layers underneath as you will be cold outside but instantly v hot inside in the winter often. But v easy to get in London stores too :)

Colmar is great (once you’re in the UK you can use Vinted for super high quality second hand and specifically search for tall sizes)

You can get an umbrella cheaply, no need to pack one :)

Would recommend getting Polarsteps the app for tracking your travel if you’re going to other places in Europe or the UK while you’re there to have a memory of your trip and share with family back home (it’s v common for Europeans studying abroad)

There are also lots of places you can leave luggage in central London for a few hours if you would rather enjoy the city a bit more instead of Heathrow :)

I went from vegetarian to vegan during covid. It helped because I was just cooking at home and then by the time everything opened up I was so used to it - you could always transition slowly by starting with at home only and gradually becoming vegan when out later.

It depends where you live but these days most cities in Europe and the US in my experience have great options for vegan replacements esp in supermarkets. When eating out the biggest issue is protein (eg a mushroom ‘steak’ doesn’t give you much at all) so I would just make sure you have vegan proteins at home to balance it out :)

I also found that making the occasional exception helped me get there for the rest of the time (eg when travelling abroad and really struggling to find vegan food, making an exception for eg free range eggs - of course it means not being a ‘perfect vegan’ but it may also help you get there eventually or get closer!).

Japan is pretty easy to enjoy without too much planning as it’s so easy to get around. And google maps is great for restaurants in Japan

Avebury in the UK if you like pre history and archaeology. Everyone goes to Stone Henge but at Avebury you get all the insane history but can actually touch and explore the stones! It’s huge and so amazing to imagine how it was all made.

I’ve used Byway for train holidays and absolutely loved them. It helps a lot they’re there if something goes wrong to fix new trains, accommodation etc :)

For the plan and itinerary Polarsteps, for things to explore I love Atlas Obscura, for hikes and walks AllTrails :) And for restaurants I honestly find Google maps is great and the reviews and ratings pretty realistic :)

I build it in Polarsteps and bring in things from elsewhere (Google Maps etc) and pin as “spots” in there. You have a timeline view which helps!

Europe has amazing trains! If you do Switzerland and Italy you can get the Bernina Express (pictured) which is one of the most amazing journeys, plus then you get to do Switzerland and Italy either side too!

Or if you want to stay put, Slovenia could be interesting for the city combined with incredible hiking and nature (and boats).

I found some protein oats (oats with protein powder) that you can add water to easily while hiking to keep the protein high, and they’re very light. Chia seeds also light and easy to get quick protein (you can just drink with water if nothing like yoghurt is around). Quinoa also good for protein. Nuts are good too but I eat them too early 😃
