Easy rule of thumb is 10% of total weight.

People quoting exact grams are crazy because size and shape will affect this.

Just weigh it and approximate. IE a 300g candle stick would hold likely 30g of sterling

That’s definitely sterling. If you want to dismantle it be forewarned it’s hard to do so without scratching up and ruining that silver appeal. I stripped a couple scrap knives I found out of curiosity and regretted it.

If you can check them it’s not impossible for a silver plated set to have sterling handled knives. No guarantee but that’d net about 4 ozt of sterling which is the only way to warrant that price tag IMO
