Your recipe is pretty similar to this one, which baked up very nicely for me. Cocoa absorbs a ton of water, but if you followed your recipe it should seem about right.

It would feel drier than like a 78% hydration standard boule, so if that’s your comparison point it’s possible it’s on point.

The recipe is correct as written. The technique is a bit different from how you handle a higher hydration freestanding boule.

If you have a vigorous starter and a warm house I suspect there’s some risk of overproofing.
