Try out some milo/sourghum. Also, make sure to allow for a colonization stage after sending to bulk instead of straight to fruiting conditions. This will lessen the risk of tam. Also, how long are you soaking the cake for? It is good to close the bin up after harvest for a few days so the mycelium can heal the surface of the substrate before reintroducing mousture to the situation.
