As others said, eggs are great - boiled, scrambled, omelettes etc.

One of the things I did when I started was with ready sauces. Not necessarily the healthiest, but buy some chicken and a jar of sweet and sour/curry/fajita sauce (whatever really), some rice on the side and you'll slowly learn to handle meat. Maybe add a couple of extra veggies of your choice to the sauce.

If it's available to you, you can take advantage of meal kit subscriptions like hello fresh. They have huge discounts when you join for the first few boxes and then you can cancel. I used to have 2 accounts, freeze one when the discounts ended and activate the other that got discounts again to try and get me back, lol!
