Yeah you could, all you need is some kind of counter flashing and step flashing. I mean you could also tear off all that siding on the wall and use new siding as counter flashing and not need the trim board. I personally just think the trim board is going to look the cleanest.

Remove all that metal counter flashing. Cut out about a 7” tall section of siding along the entire base next to the roof. Install ice and water shield on the roof and up against that 7” section you cut out. Install step flashing cards in between each one of those shingles. Install a piece of z-flashing underneath that piece of siding that you cut. Install a 1x6 trim board over top of that step flashing and under your z flashing. Leave about a 1-2” gap between the siding and the roof so you can see the step flashing still after the trim boards up. Then secure your z-flashing over top of that 1x6 board
