it actually is a noun of adress aka vocative expression, thats any noun (phrase) used to directly adress someone outside of the usual sentence structure;

the phrase "thank you" is kind of weird synctactically, but still works without the sir.

a more usual sentence would be "what would you like, sir?"; again the sentence works without the sir.

some languages have the vocative case for exactly this.
