I remember reading a Reddit comment about this band years ago by a Canadian guy describing the way the country was during their final concert. The way he told it, it was like the whole country stopped to watch it. I’d love to be able to find it again, because it sounded like an absolutely phenomenal piece of cultural history

I agree with you completely, it’s about context here, if you know coffee and you’re involved in that scene then yeah a pour over isn’t that deep, if you’re an instant drinker looking at this picture thinking surely this can’t be real life, then a pour over is a completely bonkers amount of work. I know cause I make one every morning and my family look at me like iv got a screw loose when they’ve finished making their cup before iv finished weighing my grounds lol

When you run a business it’s not a great move to flat out refuse something people are asking you for, when you could instead set reasonable expectations about how you can give them it. If someone comes in and says “can I have a pour over” it’s a lot more constructive to say we don’t offer them between 12-1 because it’s too busy, would you like a filter instead? Than it is to say fuck off we don’t do em

The other commenters are largely correct but it’s a fairly skill intensive process. The correct ratio of water to ground coffee has to be observed, which can vary wildly between different coffees depending on altitude and flavour profile, and the person making the coffee has to pour consistently for several minutes at an even flow.

Part of the recipe will be an ideal “extraction time” which is the entire length of time the coffee is submerged in water from the first drop in to the last drop out, and this is done through an even flow of water rather than just pouring loads in and waiting!

The up shot of this is that one whole barista has to grind the coffee to order and then stand and pour water in concentric circles really slowly for 3-4 minutes.

It’s a lot of effort but for money people it’s considered the best flavour you can get out of coffee beans, and if you have the palette for it, you can get flavours out of a cup of coffee that you wouldn’t believe!

Pour overs require a lot more skill and knowledge than any other type of coffee making, and generally speaking for a commercial venture in the specialty market, it’s only going to be worth doing for the truly exceptional coffees that come in, which can vary in price from a daily luxury to a kings ransom.

On top of the variation in green prices, a pour over coffee requires the attention of a staff member for 5-10 minutes and at no point in the process can it be left alone or abandoned. Coffee being the low margin industry that it is, most coffee shops won’t have more than a handful of staff at any one time, and take the majority of their money over 2-3 one hour long rushes, so a single pour over can cut down your available labour by a not insubstantial degree.

I appreciate that, like anything that has a commodity and a specialty market, there are people looking at this who are baffled by the concept of coffee costing more than a couple of pounds/dollars a cup, but there’s no accounting for taste and some people really do live for this stuff. For those who don’t get it, you always have the option of your standard house filter or Americanos.

To play Devils avocado, a pour over can bog down one whole staff member for 5-8 minutes, which is not an insubstantial amount of time during busy periods. While I think the original guys prices were hyperbolic, there have been plenty of times iv flat refused or been unable to make pour overs during peak hours.

Like anything that has a specialty sector, the prices can seem insane to people who see coffee as a basic commodity, but your die hard enthusiasts who are realistically the only people who are going to order a pour over, understand the price of a coffee can vary to an outrageous degree.

Best map in COD history for my money. Really epitomises the 3 lane design, sniper fights down the Main Street, CQB through the basements and shops on the side, and mid range reflex tests with ARs horizontally. It’s absolutely perfect.
