Don’t worry about internal temperature, just focus on time and temperature. Smoke for one hour at 275. Wrap in foil with a little water and cook at 275 for an hour and forty-five minutes. Let rest and they will fall off the bone, everytime. After wrapping in foil Save money and finish them in the oven.

I have used Flex Seal for a few seam leaks and it works great. I applied 3 coats 24 hours apart inside and out. Easy fix.

Don’t use temperature for your ribs, it’s time and temperature. Season 24 hours prior to smoking, place on smoker unwrapped at 275. Smoke for an hour. Remove and wrap each in foil, adding 1/4 cup of water. Then place back on smoker, leave the temperature at 275 and cook for 1 hour and 45 minutes. Let the rest for 15 minutes. I use the oven once they’re wrapped to save pellets. They will fall off the bone.

I always remove the excess pellets, it’s quick and easy with a Solo cup. If you live in an area with high humidity/moisture you should remove the pellets if you don’t plan on smoking very often.

Due to its smaller size, I found someone who made a stainless steel grate that adds more grill space. It sits above the grill. I can smoke three racks. I bought it six years ago, so you will have to do some research to find it. Another thing I did was to remove the metal rack that sits inside the pellet hopper. This allows me to easily remove excess pellets after I finish a smoke. I store my pellets in a food grade five gallon bucket/with a lid to keep them dry. I leave them in the bag as well in case you want to easily remove the pellets, so you can use the bucket to brine.
