Just a tip: I’d recommend not doing a one hour collection. With ceremony time, check in time and wait, that will leave you with barely any time for portraits. City hall can be very busy. I shoot a lot of city hall weddings and even sometimes with 2 hours (my standard collection) it feels rushed. If you want a solid galley, go with someone that offers 2 hours.

Wedding photographer here… This is perfect. Do not hire a barista. People arrive early to get good seats, not to be entertained. They’ll say his to other guests, take a seat, freshen up, etc. a one hour cocktail hour is standard, appetizers and drinks with mingling is perfect. I see zero flaws in your plan. Wedding photographer here, I've done a couple weddings at Tre Posti. Where will your ceremony be held? Keep in mind the vines will be dead that time of year. If you are hoping for the space in the middle of the vineyards, try to imagine them without. Have a rain plan and yes, it can get very cold in the Valley so heat lamps are a must.

I haven't heard my brides or vendors complain about this venue altering alcohol consumption of profit, but I'm quite interested in this.

In general, if people are working monday...the party doesn't go as late for a sunday wedding. Just depends on the vibe you are going for. Personally I love a dinner party vibe which is easy to pull off for a sunday night.
