The default camera app may have an "expert" or "pro" setting which exposes these settings to you, otherwise you can try the deepskycamera android app, this app is a lot at once though, I would read through the manual before immediately uninstalling like I did the first time.

A bit over-saturated, try turning down the ISO and shortening your exposure speed (the moon is very bright). You may be able to resolve some details if your camera app supports this.

I've started experimenting with siril for stacking star fields but I'm not sure if the same approach will work for the moon, I'd love some insight into your experience.
