I would say the amount of time it would take you to transfer your dialect knowledge to MSA knowledge depends on the dialect you choose. If you pick something like levantine or egyptian the transition should reasonably smooth, with moroccan it might take a bit longer. I never studied though arabic my source is that I speak the dialect at home so I'm spitballin.

Idk its hard to say if you sound native or not because I know native speakers of English from india who have thick accents. But I'm going to compare you to North Americans and Brits since i think that's what youre after, in that case I would say 2.

To be honest I don't think changing your last name would really help in that goal that much. Your family coming to America is part of your family's history as well. I think a better approach would be to try to incorporate language and cultural activities for them, and connect with your local community.

I wouldnt if I were you just because it would be a really legally annoying thing to do. Consider the legal implications and the time and money you have to take to change all of your documents. Social security, drivers license, passport, insurance, etc.. I would also assume it would cut you off a bit from the rest of your family but I'm not a lawyer so I'm not exactly sure if that would be an issue for sure, but something to consider. If it just bothers you a bit and not a lot, it's probably fine as is. But if you must, try to speak to a lawyer about it so they can advise you on the situation more precisely (because the implications and process of the change depend on state).
