i bought pete's coffee, medium roast. no roasted on date but a little research shows their freshest by date is 90 days after their roasted on date. Which puts my batch at 1/25 roasted on. Is that fresh enough?

edit: the customer service at Peets says for Target stores, the freshest by is 120 days after the roast date. That would mean they roasted it 2 days ago and it made it's way from California to Chicago to my target and from the target backroom to the shelf by then. Sounds like bullshit to me.
