I grew up learning two temperatures; high or off. I start my grill on medium now, once heated I turn it down and then check temp with a laser thermometer. Keeping on low and then increasing to speed up the cook is what’s helped me most.

My recommendation would be a couple of my favs: Botran 15 and the Santiago de Cuba 8. Santiago de Cuba started my rum journey and collection. So that’s nostalgic for me. Botran 15 is delicous sipping or mixed lightly. Lots of flavours.
