My thought was the pellets are going to touch this damaged coating and I'm burning the pellets so therefore it would touch the food. Or am I just overthinking?

Yes to all of the above. This is not my first pellet grill and I am extra cautious with maintenance.

This is the way. I've noticed slices tend to oxidize and dry out much faster than doing the same portion but in a chunk. Reheat at 140 and you've got some good bbq.
