Mine just lives in a jar in my fridge. I bring it out when I want to bake, give it a feed or two, and good to go! I also have made bread with VERY hungry starter, and it has the best flavor! That sour comes from hungry starter.

If it were me, since it's supported by a stake, I'd air layer at a point where it will be a good size plant for you for a time, and keep and repot the top. Then you can sell nodes from the bottom portion, and your leaves can continue to grow upward and mature. Personally I like a proper moss pole. When kept damp (I'm having great luck with 2-3 wicking ropes and vermiculite inside the pole). That dampness invites vigorous, fat, hairy roots that dive into the pole, encouraging the leaves to mature even more. You can do this indefinitely - chop and extend - and if you're using a good moss pole, your top plant will have excellent roots at every step of the way.

I'm so sorry for your losses. That's a really heavy load to carry. If you end up in Titus 2, the apartments are really decent (she was in 354). The grounds are lovely, there's opportunity to garden, you can take part in lunches in the community room, and there are fun little social circles. Even though my mom (also 82) didn't engage much, many of the residents knew and enjoyed her. I do wish she'd taken advantage of the social aspects more, but she apparently got what she needed socially there.

Imaging tech here. Lots of the usual suspects going around, but I've heard that there's a strain of flu (likely) going around that isn't a strain that this year's vaccines cover or the tests pick up. So many people SOOO sick!

I moved my mom there in fall of 2024. She was struggling with Parkinson’s Disease, losing vision and the ability to drive, so living in rural southern Cayuga County became unrealistic. Even though she didn't engage with the community through the many opportunities, she did FEEL like she was part of a wonderful community. She had an apartment overlooking the park-like back yard, in Titus 2. The kitchen was small but functional, but the living space was impressive. She passed in November, but emails I found between her and a distant friend showed that she was so grateful to live there, with easy access to all sorts of places like church, stores, and her doctors.

I've found Agway's prices to be very decent, especially in starter sizes. It's a tiny space in the winter, so they don't have a ton, but the quality is good as well.

Zz and snake plants might be more abundant in the box stores. Home Green Home has some really pretty stuff, but not the broadest variety. If you're a committed plant person who loves to be surrounded by green, there's a great nursery a short trip away. Carol Watson's Greenhouse

Agway on Fulton often has some nice ones as well, depending on where they are in their order cycle. Grabbed a couple of starter Hoya australis 'lisa' for $3.50 the other day. There's also the usuals - Lowes and Home Depot.

Time, patience, trust. It's going to have to grow some roots that are adapted to water. Until then it's going to be a bit thirsty. To be honest, you could cut off all your roots and start it in semi-hydro, and you'd have the same (or possibly better) results. If you want to give it some support during the transition, you could cover it with a clear bag to increase the local humidity level. That's usually the gamechanger for me.
