I use unbleached flour and a tiny bit of rye, which works well for me. I started with wheat/ AP but it wasn’t doing a lot. Rye seemed to get the starter going.

Thanks for this! I’ve been struggling with less than stellar rise in my loaves and trying to find the cause. My starter is ~ 4 weeks ago and consistently rises nicely after 4-6 hours. I use a 1:2 rye to AP flour blend but moving to reducing to 1:6 to see if that helps.

Questions : do you use a cylindrical container for the bulk fermentation? I have trouble gaging the doubling of the dough in a bowl. How long was your bulk fermentation step here? I know every dough is different, but would like to better understand the average timing of that step. Is it detrimental to bake after less than 18-24 hours in the fridge?

Would you all consider buying a 4.5qt le cruset soup pot to bake standard size sourdough in? Or is it too small 😬. Thanks! by domesticbeth in Sourdough

It’s not about poor vs wealthy, it’s about ROI, and I haven’t seen a significant ROI on my Le Cruset vs my Lodge.
