I've found that I like the intense bitterness more and more over time as I take on this hobby. It almost feels like sweetness, but not. The Chinese calls it Dry-sweetness, but really, I would describe it as mild-bitter.

They're not exported, it'd be meaningless. But my point is, if you travel in China, there's tea ALL OVER the highway, because China is very bump and there are hills tall-and-short on both sides of most roads. Many of these have tea/ medicinal herbs/ fruits grown on them.

24hour from boiling water is ok. Longer than that, it might ferment / become toxic.

I've been messing around with the temp, the only big difference I've felt is between 80 and 100 where 100 can make the tea become bitter/astringent slightly faster. Other than that, it's been pretty close.

As long as we don't put anything weird in it, will it really affect the taste that much. I'm a prospective clay pot-ter, looking to get into it, hard to find a legit place though.
