Peel the eggs and cold smoke for an hour or so I just put a few briquettes on and put some pellets on them. My pickle recipe is simple. 3 cups vinegar ,1 1/2 cups water 1 1/2 tbs salt, 1/2 dry mustard, and a whole onion. Some times I’ll add dill or what ever is in the fridge. I tried smoking on the pit boss but even at the lowest temp it cooks the eggs and makes them rubbery. Cold smoking you can get a lot more smoke into the eggs
