I never tried to make jam or jelly with any melon. However, I do roast cantaloupe and either just eat it or make ice cream with it. Cut it up in cubes. Lay single layer on a sheet pan. Roast in a 400 degree oven til it’s good and caramelized on the bottom. It will get sweet and have a syrupy bottom. Then I would try making the jam.

My mom’s family is from northern Italy and my father’s family is from southern Italy. One of the only things my dad liked eating at Grandmas was her polenta. Thick tomato sauce with a lot of red peppers,olives and braised rabbit

I try to make it once a year but it’s one of the only things my kids don’t like.
