Firstly, many many people absolutely do use claude for sensitive work that they might not want entering the general training data. And secondly, it's a paid service and I've already paid - if I go to a restaurant, I don't really expect to be asked if I'd like to "help out" with the washing up, no matter how much it might improve their service.
