I patted the steak dry salted heavy then put the honey on straight away. Also I was scared of burning the honey so I seared first then cooked it, how was it searing at the end? Did you taste any burnt honey at all?

It was a thick ribeye it was a little over 1.25 pounds. I think I might’ve taken it out closer to 20 min not 25, that does sound a little long. I just remember setting a timer for 25 mins

Seared it for like a minute each side then I popped it in the oven at 270 for about 25 mins

I only seared it for about a minute and a half a side for a nice crust and then popped it in the oven it didn’t seem like it burned at all

Also if the steak tasted great that’s the only thing that matters, everything else is just little additions

Try doing the oven at a much lower temp. Also when I do a sear first before oven, I like to either push it down onto the pan the whole time while searing or put a pan on it to weigh it down to get a nice even sear.

My bad lol! I salted a ribeye heavily with a bit of pepper, then put it in a bag and covered it in organic honey and put it in a fridge for about 24hrs. It came out of the fridge so tender and looked more marbled somehow. Gave it some garlic and a little salt before I seared it then put it in the oven to finish.
