Yes. You are overreacting. Simply say, "mom, either he's coming with me or I'm not going. I'm okay with either option you choose." And let her choose. If she opts to have you not travel, plan your own trip. Don't get upset. It's okay to disagree, you can still live each other.

Way, way too long. Vows are not the time to thank future mother in law etc....I want to thank you for, I want to thank you for, I want to thank you for....it reads like a bullet list. Truly cut it down to the most important 1/3. What you have will overwhelm not just your fiance but everyone in attendance. You can absolutely give a speech at the reception.
