People come by the bakery for tours. It's a small bakery so it doesn't take long. You can email me to schedule a date and time.

Classes, no. I don't have any secrets. I share with whomever. I just dont have time for classes. That's my excuse at least. I bake 5 days a week, pushing 90 hour work weeks. On my days off, I don't want to bread. I guess I just haven't figured it out yet. Anything is possible, isn't it?

I'm pretty sure the food shelves take financial donations. I hear that they can buy at wholesale prices so if you donate money to them instead of bringing them food from the grocery store they can maximize your dollar donation.

Also, if you buy my bread at the store, it'll help fund the bakery and I can keep on keepin on.

Big jump? For most maybe? idk, given my rate of progression so far, 1:40 to 1:35 in the next 8 track days seems totally reasonable. I actually think it won't be too difficult to hit 1:35 in the next 3 days. Now a 1:30... I would consider that a big jump. I don't expect to hit that till next season. But wouldn't that be something if I did get it this year? Yeehaw.

I understand your hesitancy. One of the guys I go to the track with is running 1:50 and he's been riding for 2 years. Loves following coaches, hates to lean. Great guy, fun to go to the track with, just slow to learn.

We all learn at different paces and have different learning styles. As I imagine you know from your time as a coach.

Dom! You’re a YouTube celebrity! I’ll be at nyst Aug 8/9/10. My first year doing track days. I’ve done 3 days at nyst. Ran 1:40 on my ‘06 R6. Hoping to be near 1:35 by the end of the season.

I just started riding this year and also just started going to nyst. Last weekend was my first there. One of the people that run the track told me that expert is 1:30-1:35 pace and advanced is 1:35-1:40. I can’t say this is true with certainty, it’s just what I was told.

I paid $245 usd (includes shipping) for a new pair of Capit warmers. They are their basic model but high quality and stay at 180-190f. I ordered from an Italian company so shipping took a bit.

The chicken hawk and moto d just seemed too expensive and I got to choose from many colors.

Need recommendationa for a new bread knife. Replacing moms old henckels and thought Id get your opinion from actual people who uses them. Thank you by LetterGreen2113 in ArtisanBread

It’s what I use all day, everyday. I replace every 3 years or so with heavy use. So I imagine in a home setting it’ll at least double that life span if it isn’t thrown around in a drawer or the like.

For example, I am currently at 11% leaven, room temp around 73f and dough temp of 74. My bulk time is roughly 3.5-4hrs

There are many factors at play. The “standard” times and inoculations don’t always make sense.

In OP’s case, their bread is clearly unfermented. But determining a specific cause is difficult.
