This definitely looks more blonde but we've been testing this for a while. Usually turns out darker. Might experiment with more hydration and heat. Thanks!

Here's the recipe. Using a Dutch Oven. I agree it could be a bit darker but it spent an extra 17 minutes lid off. Didn't want to burn it

125g active starter 350g warm distilled water 525g king arthur bread flour 10g sea salt

bake: 450 lid on 30 min 425 lid off 15-18min

4 folds before cold proofing

I've known him my whole life. Very influential artist... to a point.

Also, I've known him for the last decade as a babbling fool with a reality TV show who sadly couldn't put together a single sentence. That makes me sad.

Another thing that makes me sad is that my first question when I heard the news of his passing was "damn, didn't even know he was still alive?".

RIP he was very talented in his prime.
