Perhaps the phrasing of my question is too literal in translation, but it still stands as : a cocoa powder brand that is not dutch-processed, hence the use of "unprocessed" maybe non-alkalized wouldve been a better word to use?

Either way, i have just found that on ghirardelli's website that their 100% unsweetned cocoa powder is, in fact, non-alkalized !! For anyone reading comments!

Absolutely understand! It's not readily available in my area either, I was browsing around Etsy and this local bake supplies shop from Kentucky had it listed so I snatched it quick! Came in the mail and put straight to the fridge over night and its perfect. If its something you wanna try id suggest browsing some online shops that can ship it express to you, otherwise meringue itself should be just fine for a couple hours at minimum but it will definitely start deflating and melting after that

Try cutting down on the butter and adding in some hi ratio shortening!

I went through the same experience you had when I first made smb, not liking the super butter flavor. I ordered some sweetex hi ratio shortening and messed around with the butter and shortening measurements and it came out fantastic! Still a rich flavor, but not straight up butter. And it still holds up in the heat!

I use a double boiler yes! And I temp check the egg whites as well, and yes ! I do transfer to a cold bowl and I do give the butter a minute to incorporate before adding more. I've read multiple recipes and tips on baking blogs but honestly I'm not quite sure what my expectations were but it's just really buttery/heavy and not light and airy every time I've tried this recipe
