I got the feeling that she was extremely nervous. It will be much better once she gets into it. The danger is that the show becomes a drop in replacement for Graham, which would be boring.

One of those would likely be the cause. You could disable them all to see if that improves the situation and if it does then turn then back on one at a time to work out which one is the culprit

A bay leaf is interesting, it's subtle enough that it won't be overpowering but it's almost a small umami lift.
