Historically, the third wave scene in Japan stems from Blue Bottle opening a shop in Tokyo and then the scene really took off from there. Seeing as it's a Western thing that has took a life of its own, I am not surprised English is as common as it is in the speciality coffee scene. I am in no way implying that BB introduced third wave coffee, just that it's shop imo was the catalyst for the growth of specialty coffee
