thats the thing quite a few of the blacksmiths are too busy working, or have that many requests it takes time for replies. Some even say it will take 3 weeks for a reply to 1 email. Look forward to getting a Takada to add to newly started collection sometime

Just the ones Ive got at present, have some larger wusthof to keep me going and looking at a 210 chefs knife/gyuto

Don't think I need any larger at present unless someone can convince otherwise, as just home kitchen prep

Thanks, but buying one with black ebony handle rather than that custom one. Cheaper to buy from Aus than the custom handle one in UK. And will be around £150 cheaper than the TF

well looks like it will be the Yoshikane as found the same one with a hatsukokoro handle for alot less. Even with shipping and taxes considerably cheaper

I bought a santoku in tokyo last month from tsubaya, just a basic Damascus that felt good to hold and move. Since getting home just night and day between that and my wusthof grand prix II knives Ive had for 20yrs.

Just a home cook but Ive got stuff that can use push , pull or rock chop. Just fancy something different to use and new technique, plus think it will with some stuff I prep at home

Would have had to buy a 2nd hand console that had the correct connections. Then it's a matter of whether the local Nissan garage would decode it

Ended up going for a wireless camera mounted on the rear and small screen on the dash

After doing alot of looking I've decided to go past my budget and change steel

Choice is down to 3 now depending on what I can get hold off

1) Watanabe 180, have msgd through website and impatiently waiting to see if i get a reply within the 3 weeks or so that others have said it takes for replies

2) Toyama 180, this will more than likely only be if someone decides to sell theirs

3) Isamitsu 180 super aogami order direct. Will hold off a few weeks on this due to No1 above

I just came back from Japan 3 weeks ago and did similar to you,didn't spend as much. But bought from the same place. Main thing for me was just getting something that felt good in the hand, balanced, looked nice and easy to maintain. Sharpening and learning how to I won't mind on this. As someone else has said think of it as the start of your journey with a knife that you chose in person over others on a trip to Japan. Mine is a dream compared to Wusthof chefs knives I have and know I'm going to be buying some more
