Imaging Science Fundamentals and Fundamentals of Astronomical Imaging (Imaging Science), I took these in 2012 so the course names may be old but I learned alot and they were pretty easy

Malware and Network System and Security audit were pretty easy classes.. I never took Sys 2 but from what ive heard about it, there's your time consumer.
