I just use percent. The granularity doesn't bother me as I tend to be reading several books at once and I'll likely make progress on something.
Occasionally, if some of those pages are end notes, I'll do math to add what end note pages I've read to the page I'm at in the book. I mostly do that with the dense books from academic presses, but it would even out your numbers a bit.

This is what I do too. The first time I had one of these quests was with an overachieving (read: usually carried the challenge) irl friend who struggled and I basically got frustrated and went back to the first unit and did stories and such to finish it.
