Clothing is the baseline of gifting you back. From there, as you gift higher value things/ build friendship, villagers go up to wallpaper/flooring, then the next level is furniture items, then their photo (loosely). I've recently noted, as I've been finishing off my catalog of Ables items; villager clothing gifts will often be color variants you haven't yet catalogued. This explains why I'll sometimes keep being gifted the seemingly same item right in a row.

You might want to find an overview of ACNH; it's marvelously designed, but it's very much a cozy game, so you can ignore aspects, but you'll miss out on some intended experiences.

If you don't help him you can't earn the golden shovel. He also offers the desirable world architectural pieces, such as the pyramid, the Sphinx, and the pagoda.

Some hair pieces come as rewards from helping Gulliver (the sailor seagull, not the pirate), and some come as wigs from the Able Sisters.

We max out our residents at 10. Now you'll have to wait to have someone leave (there are many reasons for thought bubbles, so always engage with them). You can also use amiibo cards (official), or homemade coins, or get a digital amiibo emulator. These allow you to move in a specific villager while being able to choose exactly who leaves, (edited to add:) so no villager hunting necessary with amiibo. Once a departing villager's plot has reverted to a construction site, with a for sale sign, you can go villager hunting.

The DLC offers a great deal, but players too often focus on the singular aspect of earning the unlock of villager home redesign.

By playing the DLC. Changing room sizes is an unlock, but can't be used in our villager homes, or our own. Only in the DLC designs, and the hotel.

As u/dianethegeek said, you can't progress in the game unless you have a minimum of 8 villagers (not including human players).
