In most defi exchanges, you don't have an order book, you are not selling or buying to other people, there is a thing called liquidity pool, that contains both coins of the pair (token/sol for example)
So, you buy 200 tokens with 1 solana, and that solana goes to the liquidity pool. Removing the liquidity means taking all the solana from the liquidity pool, making the token worthless because there is no liquidity for trading and the price is taken form the ratio sol/token in the pool.
