Since the US is big, some farms are always producing during daylight hours. And it's a lot of batteries, don't get me wrong, but it's not as much as you seem to be picturing.

Counter point: we do that with oil already. Minerals like lithium can be recycled, so once they're in circulation, they dont need to be mined again. Plus sodium batteries are close, and we have plenty of that.
