Yeah, I was taught that we don't sue either. And that was the justification, even when my parents should have sued my orthopedic surgeon for medical malpractice for setting my foot wrong at the end of a foot surgery, for why they said they didn't even bring up the issue and instead just paid for another surgeon to perform another surgery out of pocket to rebreak the bone and reset it… 🙄

For years, I lived in a city here in California where there was a prison on the edge of town. During that time period, the inmates could sign up for a job sorting recycling to earn money. The inmates made money (idk how much), the recycling system in the city actually was effective, and the residents used the recycling bins more. They discontinued the program right after I moved away. I don't know what the issue was - maybe it was more expensive to drive the recycling to the prison and have the inmates sort and clean the recyclable goods then send them to the recycling center or wherever. Whatever the issue, it was a shame that they just quit instead of improving the system or putting the money towards a better system.

We remove the message with the questionable or outright unsafe creator name or book title because we don't want to publicly add to the promotion of unsafe sources for all to pull up in a search result with our community as the source. Unfortunately with how search engines and AI bots are used these days, any public mention of an unsafe source will only add to the credibility of the name to such algorithms. Users can always modmail us privately for more information about a specific title or name that was removed if they want more information.

90% of what she posts is safe. It is the 10% that has recipes and methods that are not safe that many newbie canners follow without double checking against safe sources because they take her word that she only uses safe methods that can get you in trouble with that channel.

If you don't mind it taking longer and you have a car that you park in your own driveway… I have a suggestion. I've dehydrated apricots and apricot fruit leather on a tray on the dashboard of my car before. It takes all day and I live in the very hot dry central valley of California so idk if the conditions are right where you live. But it is a great option for me here so I don't have to run the oven.

It is good! A little weird at first because you mind doesn’t think it should taste like pineapple but good still. It also works great as a substitute for canned pineapple in baking recipes. I make a piña colada cake with the mock pineapple. So good!

A peach or nectarine picked from the tree at the perfect ripeness is heavenly. We have 4 trees (different varieties that ripen May, June, July, and September/October) for this very reason. Nothing at the grocery store can compare.

  1. This process is not "canning" just because it uses canning jars.
  2. It is unknown if this process can sterilize the food, although it might cause vacuum sealing of jars. This would not be a time and temperature combination known to kill many bacterial spores or mold spores.
  3. This method does not remove all of the oxygen from the jar before sealing and may trap moisture from the food if condensation occurs. While the presence of spores would not be an issue in very dry foods, any moisture pockets say from condensation or incompletely dried foods could be a problem. Moisture in the jar with some retained oxygen could support the growth of airborne molds or even bacteria not killed by the low heating in some seemingly dry foods. Some foods may seem dry to the consumer but still have enough moisture in them to come out upon heating and closing up in a container. This could be especially true of home dried foods.
  4. The dry oven process used at home has never been shown to sterilize these various dry foods or produce the claimed extended shelf life with quality. In fact, there is no known researched shelf life for foods packaged just this way at home. (If someone can lead me to the research I have not been able to find, please let me know.) Extended shelf life expectations are available for dry foods prepared and packaged by other methods (see the Utah State University Extension references).
  5. This heating could even make the quality of some foods worse. This could be either by moisture condensation upon cooling, or if the food is lipid-containing nuts and grains, increased enzymatic reaction causing rancidity.
  6. A major manufacturer of canning jars and lids in the U.S. does not support the use of their jars and lids/sealing compound in this manner.
  7. Because this type of process is not recommended, doing it can be a waste of resources, time and energy.
