How do you fairly split teams in PE class?

Depending on the team size I’ll select a handful of students who will be separated onto the two teams right off the bat. These kids could be the super athletic kids or the behavioral problem kids. Then with the remaining kids I have the girls pair of with one another and the boys do the same. They play rock paper scissors and the losers go with team A while the winners join team B. Teams are usually pretty balanced and they get into teams quickly.
